Shrimp/Prawn Crackers
There are several brands of Prawn and Shrimp Crackers. Here are two that I recommend--they can be found in any Asian market. In Vietnamese cuisine, these crackers accompany a variety of salad dishes called "Gỏi." A small amount of Gỏi is scooped up onto a cracker the way that a tortilla chip scoops up salsa.
To prepare, heat about 1 cup of cooking oil in a large wok over high heat. Place a few chips in at a time. Since they only take about 5 seconds to expand and cook, be prepared to quickly remove them from the oil to avoid overcooking. Fry as much as desired. Cooked chips should be served immediately. Leftovers should be covered in airtight containers and will keep for a few days.
