Eating organic and being healthy doesn't have to be boring. Most people imagine cardboard rice cakes, tasteless soy bacon or dry tofu burgers. To the contrary!!! We can still eat the dishes we love...it's as simple as replacing as many ingredients as possible with organic and locally grown products. The most important thing to keep in mind is knowing which foods to use as healthier alternatives (e.g., wheat bread instead of white bread, brown rice instead of white rice, etc.)
